We had nearly one week of snow which means our normal weekly activities were not happening. So we had quite a few lazy mornings at home that involved eating breakfast in bed, napping with mommy, making homemade paint, and of course playing in the snow!

Chicken Alfredo
Pioneer Woman's Chicken Alfredo
12 ounces, weight Bowtie Pasta (farfalle)
12 ounces, weight Bowtie Pasta (farfalle)
4 Tablespoons Butter
2 whole Boneless, Skinless Chicken Breasts
Salt And Pepper, to taste
2 cloves Garlic, Minced
3/4 cups Dry White Wine (may Substitute Low-sodium Chicken Broth)
1/2 cup Half-and-half
3 Tablespoons Heavy Cream
Low Sodium Chicken Broth, As Needed For Thinning
3/4 cups Parmesan Shavings Or Grated Parmesan
2 Tablespoons Fresh Parsley, Minced
Cook pasta according to package directions. Drain and set aside.
Salt and pepper both sides of the chicken breasts. Heat 2 tablespoons of butter in a large skillet over medium-high heat. Add chicken breasts and cook until deep golden brown on both sides and done in the middle. Remove from the skillet, slice into thin strips, and set aside.
Add additional 2 tablespoons of butter to the skillet, followed by the minced garlic. Stir the garlic around the pan to avoid burning, and cook for 1 minute. Pour in wine (or broth), then let it bubble up and reduce for 1 1/2 to 2 minutes. Add half-and-half, cream, and extra salt and pepper, whisking constantly until it's all combined. Allow liquid to heat up and thicken for a few minutes. If it gets too thick, you may thin it with a little chicken broth.
When the sauce looks good, remove it from the heat. Add Parmesan to the pan, then throw the hot pasta right on top of it. Toss it a bit. Add the chicken and continue tossing until it's all combined. Again, if it gets too gloopy, splash in a little broth (you may return the pan to low heat if it needs it.)
Taste it, adjust seasonings, and top with minced parsley and extra Parmesan. Serve immediately!

Lyla's Baby Shower
Because we were home all morning and being lazy, I told Caroline that we would paint her nails for Lyla's baby shower. And then she asked if she could paint mine.... So I said yes! It was a total mess, but I know she just loved it! Thankfully, I had time to redo them {without her seeing} before we went to the shower.
Caroline had so much fun at the shower. She just loves Mrs. Lindsay, but she definitely had a slight crush on Mr. Wes! She asked me atleast FIVE times the morning of the shower if Mr. Wes was going to be there! Thankfully, he came! She loved seeing Baby Faith too!

Pancakes on Saturday
Yesterday, we had a lazy morning at home! We made homemade pancakes because we didn't have any box mix. They were so good that I'm not sure we will ever use a box again! Then we watched two movies before getting ready for my good friends baby shower!
Ingredients:
3/4 cup milk
2 tablespoons white vinegar
1 cup all-purpose flour
2 tablespoons white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
2 tablespoons butter, melted
Directions:
Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour".
Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into "soured" milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.
Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.
