Pioneer Woman's Ice Cream Pie

{I thought to take a picture pre-caramel sauce and post-cutting}

 Ice Cream Pie with Easy Caramel Sauce:

For the Crust:
Preheat the oven to 350 degrees F.
Crush 18 graham crackers in a food processor or resealable plastic bag. Pour the crumbs into a bowl and stir in the melted butter. Press into a pie pan and bake until golden and set, about 5 minutes. Set aside to cool completely.
For the Filling:
Remove the ice cream from the freezer and allow to soften slightly. Mix in the pecans, peanut butter cups and peanut butter crunch candy bars and pour the ice cream mixture into the crust. Cover with foil and freeze until very hard, 1 to 2 hours.
{I omitted the pecans; and used 4 peanut butter cups, one Hershey bar, and one Butterfinger}
For the Caramel Sauce:
Mix the brown sugar, half-and-half, butter and salt in a saucepan over medium-low heat. Cook, while whisking gently, until thicker, 5 to 7 minutes. Add the vanilla and cook another minute to thicken further. Pour the sauce into a jar and refrigerate until cold.
To serve:
To serve, cut slices of the pie and serve on individual plates with cold caramel sauce spooned over the top and sprinkled with pecans. Serve with extra caramel sauce on the side.

I made this for a girl's night out birthday celebration, and everyone loved this! I must say the Caramel Sauce could easily be eaten straight out of the fridge with a spoon!!!!!!!!!!!!!

3D Glasses

This girl LOVES the 3D glasses for our television. They are in a box on our coffee table and she plays with them atleast once or twice a day. It is so funny to me! 



She didn't take a nap at school today, so we came home and just cuddled on the couch and took goofy "selfies" of ourselves. I left the room and came back to find her sound asleep on the couch. She has never done this before and she slept for almost two hours there! Thankfully, she hasn't asked to do it again!

Easter Weekend

We had lots of good food and fellowship through the weekend. We started out Friday night at my parents house with just my immediate family. Granny came up to spend the night, and Caroline loved having her visit for a few days.


On Saturday, we had Easter lunch with my mom's side of the family. I wasn't very good about taking many pictures, but I did manage to get a few good ones of Caroline before everyone arrived. 






Holding baby Abigail might have been the highlight of her weekend. =))

On Easter Sunday, we went to church, and then Stephen's parents and brother came over for lunch at our house. We had a very non-traditional meal of spaghetti and meatballs with this delicious salad and an Italian Creme Cake. I even used our formal China for the first time!


We dyed Easter eggs with Caroline after lunch, and she loved it. She is probably the cleanest, non-messy egg-dyer you have ever seen. =))


Italian Creme Cake

This was our Easter dessert, and it was wonderful!! 


Italian Creme Cake

Ingredients:
5 eggs - separate: beat whites stuff; set aside
2 cups sugar
1 stick butter, softened
1/2 cup shortening
2 cup + 2 T cake flour
1 cup buttermilk
1 cup coconut
1 teaspoon vanilla

Directions:
Cream sugar, butter, shortening. Add egg yolks one at a time. Alternate flour and buttermilk, and gently fold in egg whites, coconut, and vanilla.

Prepare pans ahead of time... grease and flour 13x9 pan or 3-9" round pans {if making a layer cake, use wax paper in bottom of greased and floured pan}.

Sheet cake: bake 40minutes @ 350 degrees
Layered cake: bake 30 minutes @ 350 degrees

Frosting:
Cream together 1 stick of butter and 1-8oz cream cheese. Then add 1 box of powdered sugar, 1 teaspoon vanilla, and 1/2 cup nuts {chopped & toasted}**

**I only put nuts on the outside of the cake rather than mixing directly into the frosting**

Nursing Home

We made our "seasonal" visit to the nursing home today. The kiddos all looked so cute in their Easter outfits. It was such a blessing getting to pass out little crafts that showed the reason why we celebrate Easter. 




After the nursing home, we went to celebrate Uncle John's 30th birthday. These two are so into blowing out candles on the cake. Ha!

Spring Time

Oh what I would give to have the weather back that we had last weekend!!! We had the most beautiful weather last week and into the weekend, so we definitely took advantage of being outside. We have played and played and played out on the drive way, and on Friday we went to the park with friends. Then, we kicked the weekend off with some fishing Friday night!

Spring Music Program

Yesterday, Caroline had her spring music program at school. Based on her dance performance in November, I was a little nervous. She moved her mouth a tiny bit and tapped her foot a tiny bit. Ha! But she stayed on stage and did not cry, so I'm calling it a SUCCESS! It was good practice for her dance concert coming up in a few weeks. =))

Ribs with Daddy

This girls loves her some meat!! Our neighbor smoked Stephen some ribs, so he and Caroline had a little snack on Sunday night. It so funny how some things I think she will eat, and then the things I think she won't eat, she loves!

Gentry Safari

On Saturday, my friend Molly asked Caroline and I to go to the drive through safari. I had never been, and it was so much fun!! It was only about 30-40 minutes from our house, and it was definitely worth the drive! They had so many animals to see, and Caroline LOVED it! She loved feeding all the animals - I was kind of shocked she actually did it! We packed a lunch/picked up Chick-Fil-A to eat while we were out there. We couldn't have asked for a better day -- the weather was perfect!
